It is white to yellow-white crystal particles or crystal powder, odorless and tasteless, and its melting point decomposes above 200°C. D-Sodium erythorbate can prevent the formation of nitrosamines, a carcinogen in pickled products, and is widely used to preserve and enhance the color of meat, fish, vegetables, fruits, alcohol, beverages and canned foods.
